              and railroad supplies. They are agents for the Union Metalic Cartridge
              Co's implements and cartridges. They keep in stock a complete assort-
              ment of all sizes, for jobbing and export trade. They also represent the
              Cambridge Roofing Co., of Cambridge, Ohio, in this section. They pro-
              pose to be the representative house in this section in heavy hardware,
              making a specialty of carrying full stocks in this line. They carry a com-
              plete and comprehensive stock, averaging $20,000 in value ; their trans-
              actions will reach more than $100,000 annually. During its comparatively
              brief existence, the firm of Piper & Schulthess, have achieved so signal
              and complete a success, as to rank them with the most prominent and
              representative houses in the city, closely identified with San Antonio, her
              development, industrial growth and general prosperity, conducting their
              business upon the most elevated principles of mercantile honor ; they
              merit the highest consideration of the community.

                  Of all the manufacturing interests in which the enterprise of man is
              engaged, that of making flour holds the ranking position. Of all human
              necessities, the food supply out-weighs the balance in the ratio of two to
              one, and as a natural consequence, interests connected with it—its pro-
              duction and distribution—are of the most vital importance. The conver-
              sion of grain into flour, dates from a period, when, the "memory of man
              runneth not the contrary ;" tradition does not throw any light on the sub-
              ject. What we do know is that in the remains of utensils, used by peo-
              ple, of whom we have no historical trace, except ruins, such as the
              tumuli of the mound builder in America, the ruins of Pompii, etc., arti-
              cles for grinding and pounding grain have been found. Of all cereals
              which the soil produces, in response to man's labors, wheat contributes
              most to his uses, as it stands at the head of food-grain, containing be-
              side a large amount of starch and introgenous principles, those mineral
              elements required by the human system. Analysis gives it 14.10 parts of
              water, 2 of mineral-water, 13 of albumenoids, 6.76 of carbohydratis, 3 of
              crude fibre, 1.5 of fat. The mention of wheat in the Old Testament, and
              its culture by the ancient Egyptians, are proof of its antiquity. The
              Chinese claim that it was used for food purposes, in China 2,700 years be-
              fore Christ. The proximity of San Antonio to the great grain producing
              regions of the South, gives her facilities of unusual value, and fortunately
              she has business men of sufficient enterprise to utilize them, and among
              the many business enterprises contributing to the reputation of the city,
              there is no single establishment that has assisted more in bringing about
              a spirit of progress and stimulated industrial enterprise, than that of C.
              H Merritt & Co., by its capable management, practical skill, enlightened
              enterprise and business ability. The fact has been incontestibly demon-
              strated, that the Alamo mills produce flour, not only. of superior quality,
